Cinnamon-apple baked oatmeal

Ingredients

2 1/4 cup(s) uncooked old fashioned oats

1/4 cup(s) packed brown sugar

2 tsp ground cinnamon

1 tsp baking powder

1/4 tsp table salt

2 large egg(s) egg(s)

1 1/3 cup(s) soy milk

1 tsp vanilla extract

2 medium , unpeeled, cored, and shredded fresh apple(s)

1/3 cup(s) chopped pecans

3 cup(s) (such as strawberries, blueberries, raspberries, currants), cut if large mixed berries

Directions

Preheat oven to 375°F.

In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk eggs, milk, vanilla, and 3/4 cup water. Stir milk mixture into oats mixture; fold in shredded apples.

Coat an 11 x 7-inch baking dish with nonstick spray. Spoon in oats mixture. Over top, evenly sprinkle pecans. Bake, uncovered, until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
